Chicken Piccata and Summer Pudding!


I do not mean to have put 2 posts about cooking in the last 2 days , but, I am convinced you will find this post interesting especially if your a cook! This post will show you how to make my favorite meal and dessert (we're having this tonight!) The dessert is Summer Pudding which is sold in England, and Chicken Piccata which is a recipe from the cookbook: Barefoot Contessa at Home!
Firstly I will show you how to make Chicken Piccata!



Ingredients:

Any amount your feeding Boneless, skinlss chicken breasts

1 cup All purpose flour, seasoned with pepper and salt

2 eggs

1 1/2 cups seasoned dried bread crumbs

good olive oil

3 tablespoons butter at room temperature

1/3 cup freshly squeezed lemon juice (2 lemons),

1/2 cup dry white wine

Spaghetti

or

Salad Greens




Prepare:

place flour on one dish, eggs lightly beaten in a bowl, and breadcrumbs in another dish

preheat oven to 350 degrees



Instructions:

Pound chicken breasts flat (it's easiest to place chicken in a ziploc bag and smash with a rolling in.)

First cover chicken with flour, then dip in the egg, then cover with bread crumbs.

Boil water for pasta.

Put pasta in boiling water.

Fry breaded chicken in the olive oil. Turn when brown. When cooked place on a baking sheet in oven to keep warm.

Wipe out frying pan used to cook chicken. Melt all the butter in the frying pan.

Pour in White Wine and lemon juice.

Simmer until reduced by half.

Now make the salad (optional) sauce (optional too) by adding 2 tablespoons olive oil and 1 tablespoon lemon juice and whisking well.
